  1. Prepare 2 cups Long grain Basmati Rice

  6. Get 2 teaspoons chillie powder
  7. Get 2 teaspoons Durban Masala

  12. Take 3 potatoes, washed,chopped and fried separately
  13. Take 1 teaspoon salt
  14. Take 1 cup frozen mixed vegetables, fried in butter until soft
  15. Take 1 chicken or 1kg lamb
  16. Prepare 2 tomatoes grated
  17. Get Soft boiled Eggs, optional
  18. Take 1 tablespoon Ginger and garlic paste
Instructions to make Chicken Akhni (Pilau):
  1. Heat oil in a pot, add a heaped tablespoon of butter or Margarine,to this add cumin seeds, Bay leaves
  2. Allow onions to fry until golden brown
  3. Add 1 tablespoon Ginger and garlic paste to the fried onions
  4. Lower the heat
  5. Add in salt, chillie powder, Turmeric, cumin and coriander powder
  6. Add in grated or blended tomatoes
  7. Add chicken or lamb pieces to the pot
  8. Add half a cup of water and allow meat to soften and gravy to thicken
  9. Set aside
  10. Rince the rice in warm water, add about 4 cups boiling water, now throw in the cinnamon sticks, 4 teaspoons salt and star anise, boil rice until half cooked
  11. Drain the rice using a collender
  12. Fry mixed vegetables in butter until soft and add it to the rice,mix well
  13. Fry potatoes and add the chicken and gravy
  14. In a separate pot,oven safe or a casserole dish layer half rice at the bottom, pour chicken gravy and potatoes over the rice, add boiled eggs, top with remaining rice
  15. Pour a cup of water over the rice
  16. Cover and allow to steam in the oven for 30 minutes at 180° Celcius
  17. Garnish with fresh coriander
  18. Serve with salads or raita
