Prepare 2 cups Long grain Basmati Rice
Get 3 onions
Take 2 tablespoons sunflower oil

Get 2 teaspoons Durban Masala

Take 1 teaspoon salt
Take 1 cup frozen mixed vegetables, fried in butter until soft
Take 1 chicken or 1kg lamb
Prepare 2 tomatoes grated
Get Soft boiled Eggs, optional
Take 1 tablespoon Ginger and garlic paste
Instructions to make Chicken Akhni (Pilau):
Heat oil in a pot, add a heaped tablespoon of butter or Margarine,to this add cumin seeds, Bay leaves
Allow onions to fry until golden brown
Add 1 tablespoon Ginger and garlic paste to the fried onions
Lower the heat
Add in salt, chillie powder, Turmeric, cumin and coriander powder
Add in grated or blended tomatoes
Add chicken or lamb pieces to the pot
Add half a cup of water and allow meat to soften and gravy to thicken
Set aside
Rince the rice in warm water, add about 4 cups boiling water, now throw in the cinnamon sticks, 4 teaspoons salt and star anise, boil rice until half cooked
Drain the rice using a collender
Fry mixed vegetables in butter until soft and add it to the rice,mix well
Fry potatoes and add the chicken and gravy
In a separate pot,oven safe or a casserole dish layer half rice at the bottom, pour chicken gravy and potatoes over the rice, add boiled eggs, top with remaining rice
Pour a cup of water over the rice
Cover and allow to steam in the oven for 30 minutes at 180° Celcius
Garnish with fresh coriander
Serve with salads or raita
