  2. Take 1 tbsp Peanut oil

  6. Take 400 ml Can of coconut milk
  7. Prepare 1 bunch Choy sum, cut into 5 cm
  8. Make ready 1/2 cup Fresh coriander, mint, thai basil leaves
  9. Take 125 grams Bean sprouts
  10. Make ready 1 small Red chilli, seeded, sliced thinnly
  11. Prepare 2 tbsp Chopped unsalted peanuts, wedges of lime to serve
Instructions to make Chicken laksa:
  1. Put vermicelli noodles in heat proof bowl. Cover with boiling water for 10 minutes. Drain
  2. Heat oil, over mid to high heat. Add chicken chunks and cook. Add laksa paste. Cook until fragrant maybe 30 seconds. Stir in stock. Bring to boil, add coconut milk, add choy sum, simmer 2 minutes. Stir in fresh herbs.
  3. Divide noodles into four. Top with bean sprouts. Pour laksa over top. Add chilli, fresh herbs and lime. Serve.
