Make ready 125 g day old white rice,
Make ready 1 large egg,
Prepare 1 rasher thick cut smoked bacon,
Take 1/3 rd onion chopped very finely,
Make ready 1 spring onion,
Prepare 1 tbsp light soy sauce,
Prepare Sriracha sauce,
Make ready 1 pinch Nigella seeds,
Make ready Spray cooking oil (Vegetable or sunflower),

Steps to make Breakfast Rice Bowl π:
Heat up a wok over a high heat, and separately heat a small frying pan up on a separate hob. Spray both liberally with cooking oil.
Crack the egg into the small frying pan and turn down the heat very slightly. Allow to cook. Add the onion to the hot wok along with the chopped whites of the spring onion. Slice the greens of the spring onion lengthways and set aside for later.
Fry the onions for a couple of minutes then add in the slice of bacon. Fry the bacon until cooked on both sides, remove from the wok and slice into small bite sized pieces. Spray more oil into the wok. Add the day old rice to the wok and re-add the bacon pieces. Toss everything together. Season with salt and pepper and add in the light soy sauce. Stir to combine.
Once the fried egg has cooked through, remove from the heat. Stir fry the fried rice until the rice begins 'popping' in the hot wok. Remove from the heat.
Add the rice to a bowl. Top with the fried egg. Add the greens of the spring onion on the side and drizzle sriracha sauce over the egg. Garnish with some Nigella seeds. Eat and enjoy!
