Instructions to make Dark Chocolate Ragi Brownie:
  1. First, grease a square baking pan with butter or oil and line it with butter paper. Grease it well and dust with flour.
  2. Then keep the oven to preheat at 170 °c for 10 minutes. (All the ingredients should be at room temperature.) - Sieve the dry ingredients in a bowl twice. Mix well.
  3. Melt chocolate, butter, and jaggery powder on a double boiler till smooth. Remove and cool for 5 minutes while stirring well.
  4. Then add curd, vanilla, and whisk well. Gently fold in the dry ingredients and mix with the cut and fold method. Add milk alternatively and mix lightly. Do not overmix.
  5. When the mixture is combined, pour in tin, tap 3 to 4 times. - (Sprinkle dusted choco chips on top and press a little). After this, place the tin in the oven. Bake for 25 to 28 minutes depending upon individual ovens.
  6. To check the doneness, insert a toothpick. If it comes out clean, then it's ready. If batter sticks to the toothpick, bake for 5 minutes more.
  7. Remove and cover with a kitchen towel to cool without losing moisture. Then take it out from the tin.
  8. Dust with icing sugar, garnish with almonds and cashews and enjoy.
