  1. Heat oil in a pan. Add walnuts and roast it well. Remove and keep aside. In the same oil crackle mustard seeds, cumin seeds,urad dal, hing, green chillies and curry leaves. Mix everything well.
  2. Add onions and saute till it turns pink in colour. Add grated ginger. Cook for a minute.
  3. Now add ragi flour and salt in the pan. Cook till the flour is roasted well and turns aromatic.
  4. Add 2 cups of hot water.Mix well. Cover and cook till water is soaked up by ragi flour and the upma looks soft and fluffy.
  5. Add lemon juice. Mix well and switch off the flame. Let it rest for 5 min.
  6. Plate the upma. Garnish it with roasted walnuts and sesame seeds. Serve immediately.
