Aunt's koshari is one of the most popular of recent trending foods in the world. It’s simple, it’s quick, it tastes yummy. It’s appreciated by millions every day. They’re fine and they look wonderful. Aunt's koshari is something that I have loved my whole life.

Instructions to make Aunt's koshari:
Soak 2 cups dark brown lentils in water for 1 to 2 hours
Soak 1 cup chickpeas until it softens then boil them and add salt, lemon juice and cumin while still in the water
Grate 2 onions and put thim in a pot with oil and fry until brown then add salt, pepper, spice, rosemary and cumin and mix well
Add 3 cups of water to the pot with the fried onions then drain the lentils and add them to the pot and keep mixing them until the water boils
Rinse 2 cups of rice then put it in the boiling water from the previous step and mix well and leave until the rice absorbs the water then turn down heat to low and leave it until it's cooked
Boil 200 grams pasta then drain it and put it in a small pot with oil, salt and pepper and leave it on low heat until it's cooked.
Slice 2 onions and put them in a pan with some oil and fry it until it turns brown then drain it and add salt, pepper and spice
For Sauces: - 1- Tomato Sauce - Blend 1 kg of tomatoes, 3 cloves of garlic and a sliced green bell pepper and put the mixture in a pot with salt, white vinegar, lemon juice and oil and put it on low heat until the mixture thickens.
For Sauces: - 2- Duqqa (Garlic Sauce) - Blend 5 cloves of garlic, water, vinegar and lemon juice and put the mixture in a pot with salt and cumin and put it on the stove until it boils
It's commonly served in layers: - Bottom layer: the rice mixture - 2nd layer: the pasta - 3rd layer: the hummus - (drain the hummus before serving) - 4th layer: the fried onions - Top layer: sauces
