  1. Mix all dry ingredients, combine them well. Add butter, egg and water(not all at once). Work through your dough until it forms ball shape and is smooth to handle.
  2. Place the ball in a bowl and let it rise for an hour or so, until almost double in size.
  3. Flatten your dough, sprinkle some more flour on dough for ease in handling, give it rectangular shape. Flatten it of constant thickness and cut out 12 pieces of almost equal size.
  4. Make a ball shape of each ball by stretching and shaping it. Place them on a tray and let them rise for an hour.
  5. Fry them until golden brown, throw them in some powder sugar and cinnamon, until coated.
  6. Mix the egg yolks and corn flour and smooth.(Mixture A).
  7. Pour the milk in a saucepan and add sugar in it and vanilla extract. Heat the milk at med heat.
  8. Add the Mixture A into the saucepan and keep on whisking until it starts to thicken. When it starts thickening add the butter and whisk it one or two more. Off the heat and add the powder sugar and whisk it off the heat. Refrigerate for an hour.
  9. Fill it in a piping bag, Cut a little hole in donut using a knife and pipe in the filling in it.

Pączki are most often filled with jam but custard is my favorite by far. These Polish doughnuts are light and airy and really simple to make. Filling them is the hardest part and a pastry bag does make it easy.
