Prepare 1 tbsp mustard oil

Prepare 1 tsp turmeric powder

Instructions to make Arbi fry:
Boil arbi in cooker and wait for 2 whistles on high flame
Heat a wok, add mustard oil and heat oil on high flame so that smell of oil reduces. Switch the flame to low. Add asafoetida, carrom seeds, cumin seeds and mustard seeds. Let the mustard seeds crackle then add ginger and green chilli. Now add turmeric powder, red chilli powder and coriander powder and add arbi. Fry arbi on high flame by continuously stirring. Add salt garam masala.
Finally add lemon juice, mix well and garnish with chopped coriander leaves. Serve hot with roti or parantha.
