The ingredients needed to make Dum arbi:
  1. Make ready 250 gms parboiled arbi
  2. Prepare 1 cup grated onions
  3. Get 1 cup finely chopped tomatoes
  4. Prepare 1/2 cup thick fresh curd
  5. Take 1/2 cup powdered peanuts
  6. Take 1 tbsp kasuri methi
  7. Take 10 curry leaves
  8. Get 3 chopped green chillies
  9. Get 1 inch ginger chopped
  10. Get 4 black pepper
  11. Prepare 4 cloves
  12. Prepare 1 star anise
  13. Prepare 2 tsp red chilli powder
  14. Take 2 tsp Kashmiri red chilli powder
  15. Prepare 1 tsp turmeric powder
  16. Get 2 tbsp coriander cumin powder
  17. Make ready 1.5 tsp garam masala
  18. Get 3 tbsp oil + oil for frying
Steps to make Dum arbi:
  1. Be ready with the gravy ingredients.
  2. Peel the parboiled arbi, cut it half lengthwise if long. Prick them with the fork.
  3. Start adding all the dry spices to the arbi and coat it well. Wait for 10 minutes.
  4. In a kadai, heat oil and shallow fry the spice coated arbi. Remove them once they are crispy from outside.
  5. In another kadai heat oil, add green chillies, curry leaves, ginger,cumin seeds and temper. Now add the grated onions, cook them well till they leave the sides. Now add the spices.
  6. Mix well, add tomatoes and cook till they are soft also add the curd and grinded peanuts. Cook well on low flame till they leave the sides.
  7. Add the fried arbi and little water as per the requirement. Cover the kadai and let it cook for another 7 minutes on dum. After 7 minutes you will notice oil on top, this means our sabzi is well cooked now.
  8. Serve hot with naan, roti, phulka, jeera rice etc.
