  8. Prepare 1 inch ” Ginger: All these aforementioned ingredients to be grounded into a coarse paste/mixture for this dish
  9. Take 2 tbsps Coconut Oil or Sesame Oil
  10. Make ready Tempering Spices:
  11. Take 1 tbsp Urad Dal
  12. Take 1 tsp Mustard Seeds
  13. Get 1/2-3/4 tsp Hing/Asafoetida
  14. Take 7-9 Fresh Curry Leaves
  15. Make ready as needed Garnish: A Fresh Sprig- Curry Leaves
  16. Get 1 Handful: Freshly Grated Coconut
Instructions to make Kerala Style: Pumpkin Pachadi (Satwik):
  1. Firstly, either parboil or completely boil the pumpkin chunks with some salt & turmeric powder & with sufficient quantity of water- ensuring, that the water evaporates completely after the boiling process or very little amount is left over (if at all)- Ensure that the pumpkin chunks aren’t mushy at all & just perfectly cooked & boiled
  2. Refer to the pics given, down below Once it’s done- Transfer it to a separate plate/bowl or leave it as is in the same pan- Cover it & Set Aside for its later use just in sometime & in the interim: Let’s prepare the Coarse Masala Paste for the same
  3. In a blender jar: Add in the roughly chopped ginger, curry leaves, freshly chopped coconuts & green chillies & blend it to a coarse paste & not a smooth one
  4. Once it’s ground-pasted: Transfer & Mix it well enough with the already cooked pumpkins, give it a nice mix until nicely combined and well blended together- Now, at this stage it can be simply left to have it just the way it is, at this point…
  5. However, I prefer giving it a nice good & simple Tadka: Heat up a Tadka Pan over the medium-low flame & add into it some coconut or sesame oil- Goes in it the Cumin & Mustard Seeds, Urad Dal, Hing, 1-2 Split Green Chillies & the Curry Leaves- Allow them to splutter well & turn absolutely aromatic (keep the flame to the low ensuring, it doesn’t get burnt- Transfer it to a separate serving bowl/plate
  6. Now, pour in this Tadka to it- Mix everything well together very gently until nicely combined and well incorporated- Garnish it your way & it’s just ready to be served in no time now & ENJOY This, absolutely delectable wholesome Satwik Dish from the Southernmost part of our country- Kerala, the land of Nature, Culture, Heritage, Spices & Cuisines
