The ingredients needed to make Kerala style Appam & chutney:
  1. Get 1 packet of Appam podi (powder) I used Nirapara Appam podi
  2. Prepare 1 grated coconut,
  3. Take as required eno fruit salt
  4. Make ready 2 Green chillies
  5. Get as per taste , salt, lemon
  6. Prepare as needed Water, coriander leaves,
  7. Get as needed mint leaves, ginger, garlic, jeera
Steps to make Kerala style Appam & chutney:
  1. First of all take 4 tablespoons of Appam powder add one cup of water and boil it till it cooks. Extract thick and thin milk of half coconut and keep it aside.
  2. Take a portion of cooked podi + remaining uncooked Appam powder + thin & thick coconut milk + salt as per taste and grind it in to a smooth paste, repeat the steps till the entire packet of Appam powder is used. Your Appam batter is ready to ferment.
  3. Keep the batter for fermentation for min 10 hrs.. max 12 hrs. Once the batter is fermented kindly add one teaspoon of eno fruit salt just before making appams.
  4. Now the batter is ready and you can take a round spatula to pour the Appam batter on our dosa pan just pour the batter and make a circle once, grease the pan with oil and put the lid on dosa pan, tadaaa… Your Appam is ready to eat within 5 minutes.
  5. For chutney take half portion of grated coconut,two dark green chillies, ginger,3 cloves of garlic,half spoon jeera, some mint leaves n coriander leaves, water,dash of lemon juice and salt & sugar to taste, grind it to smooth paste and the delicious chutney is ready
