Instructions to make Moru Curry (Kerala Style Seasoned Buttermilk):
In a small cooking vessel, add curd and whisk it well. Add water and whisk till lots of foam appear at the top. Keep aside.
In a tadka pan, heat oil. When the oil is hot, add mustard seeds and allow it to crackle. Add cumin seeds, asafoetida, (add dry red chillies, if you want).
Add ginger, garlic, green chillies and curry leaves and fry for a minute.
Add sambar onions and fry till the onions are slightly brown.
Add turmeric powder, methi powder and cumin powder and fry for few seconds. Add chilli powder and switch off the heat.
Add the tadka to the whisked curd and mix well.
Switch on the heat and cook the curry on low heat, stirring continuously, till it becomes hot. Don't let it come to a boil. Switch off the heat.
Serve moru curry with steamed rice.
