Get 1 cup Basmati Rice
Prepare 2 cups Water
Make ready 1 cup Onion (Sliced)
Prepare As required Ghee (1 tbsp for roasting nuts & onions)+ 2 tsp for making rice)
Make ready 12 Pieces Cashewnuts
Take Few Raisins (optional)
Get Salt (As required)
Take 1 " ginger (Chopped)
Take 1 Bay Leaf
Get 3 Cardamoms
Make ready 1 " Cinnamon Stick
Get 3 Cloves
Take Few Peppercorns
Steps to make Kerala Ghee Rice (Malabar Ney Choru):
Soak basmati rice for atleast 15 minutes before cooking.
Heat ghee in a pan. Fry the cashewnuts till golden brown. Keep aside.
In the same pan, fry sliced onions till golden brown. Keep aside.
In the same pan, add ghee if needed. Add the bay leaf, cinnamon sticks, cardamoms, cloves and peppercorns and fry for a minute. Add ginger and fry it also for a minute. Add the sliced onions and fry till it becomes translucent.
Drain the water completely from the rice and then add the soaked rice to the pan. Add 1 tsp ghee and fry for a minute.
Now add salt and water. Mix well. Close the lid and cook the rice till done.
Once the rice is done, garnish it with cashewnuts and fried onions. Serve hot.
