Instructions to make Veg Kurma (Kerala Style) & Chapathi:
Pressure cook all the vegetables for 1 whistle.
Heat oil in a kadai and splutter mustard seeds.
Add finely chopped onion, finely chopped green chilli, curry leaves, crushed fennel seeds and ginger garlic paste.
Saute well until the onion become light brown in colour.
Add turmeric powder, red chilli powder, coriander powder and garam masala.
Saute for few minutes.
Then add chopped tomato and cook till the tomato becomes soft.
Add cooked vegetables, water as per your consistency and salt.
Mix well and cook it for 5 minutes in medium - low flame.
Add coconut milk and switch off the flame.
Garnish with some coriander leaves.
The tasty vegetable kurma is ready to serve.
