  1. I did not fully peel the red potatoes. I find the color of the skin adds to the 'look' of this dish…. so it's really upto you if you want to leave the skin on or not.
  2. Boil the potatoes in some salted water. Once they are ready, drain and transfer to a bowl.
  3. Mash well along with the butter. Add the herbs, pepper and some salt if needed. I went with dry herbs and they still tasted great. Finally add the milk and sour cream and mash / mix it all well together.
  4. Serve warm! If you are making this a day ahead, I would warm it up in the oven than microwaving it.
