Get 1 cup Besan or Chickpea Flour
Take 1 tsp carrom seeds

Take 1 cup Papaya grated after peeling

Make ready 1 Tbsp oil
Take as per taste Salt
Make ready as per taste Sugar

Steps to make Fafda:
For Fafda - in a bowl add Besan or Chickpew flour, carrom seeds roughly mashed, Papad Khar or Baking soda, water. 2 tsp oil and salt. Mix everything well and make a dough but not a dough for Roti
The trick is dough should not be a batter and should not be for Roti. The consistency should be in between.
Once dough made grease with 1 tsp oil as Besan dries up fast. Make lemon shaped balls
On a flat surface, have the ball at the edge and with the heel of your palm drag to the other end, sides will be uneven. With a sharp bendable knife and keeping the knife straight, drag from one end underneath of the Fafda to the other end but don’t stop in between. A thin slice will be seen.
Another trick is the oil has to be put in a pan and on low-medium flame the frying has to be done. One cannot make all at once and fry at once. The size of the Fafda has to be the length of the pan and cannot be more as it will fold and break while frying
Once frying bubbles will be seen and that’s good. Very gently flip the side as it might break. Fry the other side not browning it. It should be golden in colour. Once done set aside
For Papaya Chutney - peel and grate a papaya.
In a pan heat 1 Tbsp oil, add mustard seeds and let it splutter. Add curry leaves and sliced green chillies. Add grated papaya and on low flame stir for 2-3 mins. The crunchiness of the papaya should be there
Add turmeric powder, salt, sugar and stir once. Set aside, add lime juice and that’s it.
Serve Fafda with Papaya Chutney and enjoy
