Get egg
Make ready green onions
Make ready salt
Prepare tiny pinch of sugar

Steps to make Fried Rice at Home:
Chop the green onions and separate the greens and whites into small bowls.
Combine the soy sauce, sambal oelek, and fish sauce in a small bowl.
Whisk the egg into a small bowl.
Heat cast iron skillet to medium heat. Coat the pan with oil and then remove the oil from the pan.
Add a Tbsp of fresh oil to the pan, drop the egg in, and stir vigorously. It should fluff up/emulsify with the oil.
Drop the rice in before the egg is fully set. Continue stirring while breaking up and flipping the rice on itself. Don't lift the pan.
When the rice starts dancing, add salt, sugar, and the white part of the onions, stirring less vigorously.
Crank up the heat to the max. Drop in the soy sauce/sambal oelek and fish sauce and the green part of the onions and stir very vigorously. After no more than one minute, remove from heat.
Add (cooked) vegetables &/or proteins during step 8 if desired.
