Steps to make Instant Ragi Masala Idli:
  1. Arrange the ingredients. Take ragi flour, semolina. Add curd.
  2. Mix and add water to get a lump-free batter and rest for 10 minutes for the flours to hydrate.
  3. Meanwhile in a pan heat 1 tsp ghee. - Add mustard seeds and allow to crackle.
  4. Then add carrot and stir fry on high flame for 1-2 minutes.
  5. Switch off the flame and mix green coriander. Sauté and mix well. Allow to cool.
  6. Add this to batter along with ginger. Mix well. The batter should be of dropping consistency.
  7. Grease the idli moulds and add enough water in the idling steamer for boiling.
  8. Keep chopped almods, stir fried carrot in each cavity of the idli mould.
  9. Once the water has started boiling, mix the fruit salt with batter and add 2 tbsp batter on each idli mould.
  10. Steam for 10-12 minutes. Check by inserting toothpick or knife and it should come clean.
  11. Rest for 4-5 minutes and de-mould idlis. Serve hot with chutney. I served with curry. - Thanks
