The ingredients needed to make Arbi Punjabi Masala:
  1. Take 400 gms Arbi (Colocasia roots)
  2. Prepare 2 Tablespoons Mustard oii
  3. Get 1 Medium sized Onion grinded as paste.
  4. Prepare 1 Large sized Tomato grinded to form puree
  5. Make ready 1 Tablespoon Ginger garlic paste
  6. Take 1/2 Teaspoon Turmeric powder
  7. Make ready 1/2 Teaspoon Red Chilli powder
  8. Take 1 Teaspoon Coriander powder
  9. Prepare 1/2 Teaspoon Garam Masala
  10. Make ready 2 cups water
  11. Prepare 1 Teaspoon Kasuri methi
  12. Get as per taste Salt
  13. Prepare as required Fresh green coriander for garnishing
Instructions to make Arbi Punjabi Masala:
  1. Boil Arbi similar to how we boil potatoes, then peel off skin completely and then cut pieces as they are required by us.
  2. In a kadhai heat oil then we add up onion paste and saute till they carmalize in low flame and later add tomatoes puree and mix well till tomatoes soften and oil left at sides, mix well.
  3. Add ginger garlic paste and mix well till raw smell leaves, add all powders turmeric, chilli, garam masala and Coriander, mix well and add salt as per taste.
  4. Fry arbi separate and make them crispy, add in Tomato Onion paste, mix with water and cook in low flame, add Kasuri methi and mix, cover it with lid for 3 mins, and in between keep stirring., Later add coriander and mix well.
  5. Serve hot with Parathas.
