  2. In a pan pour the vegetable oil and then add the block of butter. Once melted add the chopped onion carrot capsicum and celery. Stir and cook until the onions are translucent or golden brown
  3. Add the curry powder and tomato paste and stir for a minute
  4. Add the finely chopped or blended tomatoes. Add salt. Stir and cover. Reduce the fire tona medium low.let it cook for 3 mins. Keep checking and stir so that it doesnt stick at the bottom.
  5. Once the tomatoes have cooked through and are well crushed to form a paste add the githeri and stir.add some water to your liking.cover and let it cook for 3 mins
  6. Add royco cubes and the crushed farlic paste and cover for a min
  7. Add the coconut cream and stir. Let it simmer for a min or 2
  8. Finally add some coriander and switch off the fire. Stir and serve. I love mine with pepper so i added some chilli flakes. Enjoy
