  1. Roast the sesame. Now melt the jaggery in a pan. Make a syrup for sesame. Add ghee.
  2. Mix well till jaggery melts. Now add cardamom powder. Cook till jaggery change the color and start making bubbles. Check the hardness of jaggery syrup in water. If it breaks nicely then it is ready.
  3. Now add sesame and baking powder. You can add baking powder before adding sesame also. Mix well and instantly transfer into the plate. Press to be thin.
  4. Let it cool. Now crack in small pieces. Grind it in well coarse. Take an aluminum mold and place a parchment paper.
  5. After grinding well mix nicely.
  6. Transfer in the mold. Press tightly with a bowl or big spoon. Garnish with chopped pistachios. And leave to set nicely.
  7. Now take out the gajak with parchment slowly. And cut into squares.
